Bibbidi Bobbidi….. Blueberries! Never thought we’d be saying that, but here we are. While we’ve been staying home a lot more these days, we’ve been finding ourselves trying to get more creative with our meals. We’ve always been made from scratch kind of girls, since that’s how we were raised, but these days we are finding ourselves making even more from scratch. Since we’ve been limiting our trips to the grocery store and don’t have access to some of the “fancier” options(who knew World Market would be considered a fancy food option?) we’ve been doing our best to spice things up when we can, even with limited ingredients. And as a result, these blueberry Mickey waffles with homemade blueberry syrup were born. Can’t be mad about that!

My daughter absolutely loves blueberry everything. Waffles, pancakes, muffins, cake, you name it. So when I wanted to make her some blueberry waffles with blueberry syrup for her birthday breakfast, I planned to purchase the mix and syrup on my next grocery trip and keep it simple. To my surprise, ok I wasn’t really that surprised, the grocery store didn’t have either item. It was too late to order them online, so I thought, I’ll just make them scratch, easy right? And I mean, come on, homemade blueberry syrup? Sounds divine.

Actually, it was so easy that I decided I had to share it because it was really also quite delicious. If you’ve followed our waffle adventures in the past, then you may remember that we are huge Kodiak Cakes fans. They have a lot of protein and honestly don’t make me feel so bad about eating pure carbs. Plus they don’t leave me in a carb coma, which is always a huge help.

Since Kodiak Cakes mix is something I pretty much always have on hand, I love trying new flavor combinations to keep things interesting. And even better, you can order them online at Target.com, so you don’t even have to go to the store for them. But really, most waffle mixes will probably suffice just fine. Again trying to keep things simple, the ingredients you need for these is pretty minimal, so let’s get to it. For either of these things, you can use fresh or frozen blueberries. If you’re going to use frozen, just make sure to defrost them first.

For the Blueberry Mickey Waffles you’ll need:

  • Kodiak Cakes Mix (I used the Buttermilk variety) or any simple Waffle mix will do
  • Oil
  • Water
  • Blueberries (fresh or frozen will work)
  • Vanilla Extract

For the Homemade Blueberry Syrup:

  • Blueberries
  • Sugar
  • Water
  • Cornstarch

Pretty easy right? We have been using this waffle maker pretty much for everything because, well first of all, its adorable, but secondly, I love that it makes six waffles at a time. It is a little pricey, but for us, we’ve definitely used it enough to make it worth it. I’ve also used this one in the past, which makes a nice big waffle and is a less expensive. And of course, if you’re not up for splurging on a special waffle maker, any waffle maker will do!

We also added sugared blueberries, so feel free to spice up your waffle spread any way you like. This syrup is great warm or chilled, so feel free to use it up right away(which is what we like to do!) or store it in your fridge for up to 2 weeks. You really can’t go wrong either way.

Mickey Blueberry Waffles

: 9 Mickey waffles/ 3-4
: Easy

Ingredients
  • 1 c. Kodiak Cakes Mix (or any other waffle mix you prefer)
  • 1 c. Water
  • 1 TBSP oil
  • 1 tsp vanilla
  • 1 tsp sugar
  • 1/4- 1/2 c. fresh or frozen blueberries
Directions
  • Step 1 Set Waffle Iron to Medium Heat
  • Step 2 Mix all ingredients together until fully incorporated
  • Step 3 do not overmix
  • Step 4 Fold in Blueberries
  • Step 5 Pour batter into waffle maker and cook approx. 4-5 mins until golden brown
  • Step 6 Enjoy!

Blueberry Syrup

: 2 1/2 cups
: Easy

Ingredients
  • 2 c. blueberries
  • 1/2 c. sugar
  • 1 c. water
  • 1 TBSP cornstarch + 1 TBSP water
Directions
  • Step 1 In a medium saucepan, add together blueberries, sugar and water.
  • Step 2 On medium-high heat, bring mixture to boil, stirring occasionally.
  • Step 3 Once blueberry mixture is boiling, reduce heat to simmer for about 10-15 mins.
  • Step 4 While bluerry mixture is cooking, combine cornstarch and water.
  • Step 5 Stir in cornstarch mixture to thicken syrup and allow to simmer for 4-5 mins more.
  • Step 6 If you like having the blueberries in the syrup, then you’re ready to enjoy!
  • Step 7 For a smoother syrup, we recommend pouring syrup over a fine mesh strainer.
  • Step 8 This syrup is delicious warm or cold. Serve immediately or store in fridge for up to 2 weeks!
