We are working on creating new copycat recipes to help us enjoy some of that delicious Disney magic at home, and we are so excited about this recipe! This EPCOT Warm Cheese Strudel Recipe copycat recipe hits the spot and we don’t like to brag, but it’s so close to the actual strudel from the festival, all you’ll be missing is the views of EPCOT’s World Showcase.

The Warm Cheese Strudel from Bauernnmarkt in Germany makes our top foods list every year and for good reason too. It’s sweet and slightly savory while being cozy and comforting without being too heavy. A flaky pastry with a sweet cheese filling and topped with mixed berry compote is just as heavenly as it sounds.  If you’re going to Epcot’s International Flower and Garden Festival this year, be sure to stop by the Germany pavilion and try it! And if you’re not, be sure to this recipe for a little piece of the magic at home.

What ingredients do you need to make Warm Cheese Strudel? This recipe may seem a little complicated, but luckily it’s really not. Here is what you’ll need for the Warm Strudel Copycat Recipe. 

  • Puff Pastry– if you’re ambitious and would like to make your own, that’s great! If you’d prefer an easier and faster route, store-bought pastry works wonderfully too. 
  • Egg Yolk
  • Lemon Juice
  • Cream cheese 
  • Vanilla Extract
  • Mixed Berries (fresh or frozen will do) 
  • Sugar
  • Cornstarch
  • Rolling Pin

Tips for making the Warm Cheese Strudel

Strudel may seem sort of intimidating, but these are actually pretty easy to make, although it does require just a little bit of patience. There are a few different components to this recipe but don’t let that scare you! 

Make the Cheese Filling Ahead of Time

If you want to make things easy on yourself, you can make the cheese filling ahead of time and refrigerate it for a few days before using it. But the pastry and the berries are best when made fresh and eaten right out of the oven. And that’s exactly how it should be enjoyed because it is in fact, a warm strudel!

Strudel Pastry Tips

For the pastry, if you use the premade pastry from the store, you’ll want to roll it out slightly thinner than it comes out of the package. And you don’t have to attempt a fancy pattern for the top piece of the pastry, but you will want to make sure there are a few slits in the top so that air can escape while it’s baking.  This tool is great to have for lattice cutting; so if you like working with pastry or have big plans for pies in the future, you can use this here too. We just used a knife and did our best! 

Strudel Cheese Filling

For the cream cheese filling, the important part is to use more than you think you need. The pastry will puff up a bit in the oven, so you don’t want the cheese filling to get lost in there. It’s best to use a piping bag if you can, spread it out almost to the edges, with a slight mound in the middle.  Make sure to leave a small edge all the way around the borders of the bottom pastry so you have room to seal it later.

Berry Compote Topping

And for the berries, you’ll be making a compote. Both fresh and frozen will work; although if you’re using frozen, I recommend thawing out the frozen berries beforehand so you don’t have a bunch of extra liquid that needs to be thickened.  The pastry will be quite puffed when it comes out of the oven, but that’s ok! As it cools a little, the air will escape and the pastry will flatten a little bit. When you add the berries, it’ll also slightly flatten. So don’t worry if you take your pastry out of the oven and its quite puffy.

Ingredients
  • 2 sheets Puff Pastry
  • For the Cheese filling:
  • 1/2 c. powdered sugar
  • 8 oz. cream cheese
  • 1 egg yolk
  • 1tsp. lemon juice
  • 1tsp. vanilla
  • For the Berry Compote: 2 c. mixed berries
  • 1 c. sugar
  • 2 tsp. lemon juice
  • 2 TBSP cornstarch
  • Extra powdered sugar as desired
  • 1 egg + 2 tsp water for egg wash
Directions
  • Step 1 Preheat oven to 400 degrees F
  • Step 2 Prepare a baking sheet by covering with parchment paper.
  • Step 3 In a bowl of a stand mixer or using a hand mixer, combine powdered sugar and cream cheese until smooth.
  • Step 4 Add egg yolk and mix until well blended.
  • Step 5 Add vanilla and lemon juice and beat until creamy.
  • Step 6 Store in refrigerator until ready to use.
  • Step 7 On a floured surface, roll out puff pastry 1/8-1/4 inch thick. Cut pastry into rectangles of the desired size. You will need two rectangles for each pastry.
  • Step 8 Place the bottom pastry on the baking sheet.
  • Step 9 Using a piping bag, pipe cream cheese onto the bottom pastry, creating a mound in the middle and leaving a small edge to seal the top pastry onto later.
  • Step 10 For the top pastry, cut slits into the pastry and slightly separate so that air can escape as pastry bakes.
  • Step 11 Whisk one egg and 2 tsp water in a small bowl to create an egg wash.
  • Step 12 Using a pastry brush, lightly brush edges of bottom pastry with egg wash.
  • Step 13 Cover bottom pastry with top pastry and seal by pressing edges together.
  • Step 14 Brush egg wash all over the top of the pastry.
  • Step 15 Bake for 15 minutes or until golden brown and puffed.
  • Step 16 While pastries are in the oven, prepare the berry compote.
  • Step 17 In a medium saucepan, add berries, sugar, and lemon juice and stir.
  • Step 18 Heat on medium heat and bring mixture to simmer, stirring occasionally.
  • Step 19 Add cornstarch and stir until mixture thickens.
  • Step 20 Remove from heat.
  • Step 21 When pastries are finished, place on plate and top with warm berries.
  • Step 22 Sprinkle with powdered sugar
  • Step 23 Enjoy!
