Mickey Cupcake and Treats for Valentines Day

Mickey Chocolate and Strawberry Candy Filled Cupcake

If you’ve followed us for any amount of time, you will know that we love good cupcakes. They’re portable, and cute and the flavor combinations are endless. So we created this M&M-filled chocolate cupcake with strawberry buttercream and piped chocolate, complete with Mickey ears. For this recipe, you will need a batch of chocolate cupcakes, strawberry buttercream frosting, M&M’s, dark melting chocolate wafers, and Oreos. We prefer Oreo thins because they are a little easier for the frosting to hold onto, but any kind will work!

Any chocolate cupcake recipe will do but we’ll share ours below. We love this strawberry buttercream but if making your own frosting intimidates you, feel free to substitute with any frosting you like. If you’ve never filled a cupcake before, never fear. It’s actually much simpler than it looks! After your cupcakes have cooled, just cut out a small circle in the middle of the cupcake and fill it with whatever you’re filling it with. In this case, M&M’s! After you’ve filled the center 3/4 of the way, cut off the bottom of the removed piece of cupcake and close up the hole. And that’s it!

Cupcake Recipes

Ingredients for Cupcakes

We adapted this from Sally’s Baking Addiction, but you’re welcome to use a box mix if that’s easier.

  • 3/4 cup (94g) all-purpose flour (spooned & leveled)
  • 1/2 cup (41g) unsweetened natural cocoa powder
  • 1 teaspoon espresso powder or instant espresso ( optional)
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs, at room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 1/3 cup (80ml) vegetable or canola oil (or melted coconut oil)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup (120ml) buttermilk, at room temperature
  • chocolate buttercream and sprinkles for decorating

Instructions for Cupcakes

  1. Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Line a second pan with 2 liners—this recipe makes about 14 cupcakes. Set aside.
  2. Whisk the flour, cocoa powder, espresso powder, baking powder, baking soda, and salt together in a large bowl until thoroughly combined. Set aside.
  3. In a medium bowl, whisk the eggs, granulated sugar, brown sugar, oil, and vanilla together until completely smooth. Pour half of the wet ingredients into the dry ingredients. Then half of the buttermilk. Gently whisk for a few seconds. Repeat with the remaining wet ingredients and buttermilk.
  4. Stir until just combined; do not overmix. The batter will be thin.
  5. Pour or spoon the batter into the liners. Fill only halfway to avoid spilling over the sides or sinking.
  6. Bake for 18-21 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool completely before frosting.

Make Chocolate Accents

  1. While cupcakes are cooling, melt chocolate wafers in double boiler or in microwave
  2. Once melted, spoon melted chocolate into piping bag or parchment paper cone and pipe hearts, mickey heads or other shapes onto parchment paper.
  3. Allow chocolate to cool and harden completely. Place in refrigerator if needed to help set

Fill Cupcakes with M&M’s

  1. After cupcakes have cooled, using a spoon or butter knife, cut a circle in the middle of the cupcake.
  2. Remove circle and fill with M&M’s.
  3. Cut bottom off of removed cake piece and place “top” over M&M’s

Strawberry Buttercream Frosting

  • 1 cup (about 25g) freeze-dried strawberries
  • 1 cup (16 Tbsp; 226g) unsalted butter, softened to room temperature
  • 4 cups (480g) confectioners’ sugar
  • 1/4 cup (60ml) heavy cream or whole milk, at room temperature
  • 1 teaspoon pure vanilla extract

Instructions

  1. Using a food processor or blender, process the freeze-dried strawberries into a powdery crumb. You should have around 1/2 cup. Set aside.
  2. In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on medium-high speed until creamy, about 2 minutes.
  3. Add confectioners’ sugar, strawberry powder, heavy cream/milk, and vanilla.
  4. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes.
  5. Add 1–2 more Tablespoons of heavy cream/milk if needed to thin out, if desired.
  6. Add a pinch of salt if frosting is too sweet.

Assembly

  1. Using a piping bag, frost cupcakes
  2. Add an Oreo thin to each side for ears
  3. Add piped chocolate pieces however you choose to decorate and voila
Mickey Valentines Crazy Milkshake

Mickey Ears Chocolate and Strawberry Shake

One of the easiest Disney Valentine’s Day Recipes. We recently were able to visit Beaches and Cream and had one of their new shakes. Not only was it absolutely adorable, but so delicious and totally inspired us to re-create them at home. Since we are firm believers that chocolate and strawberry is the perfect Valentine’s flavor combo, we decided to try making them with a Valentine’s Day twist! These were so fun to make and so delicious, we will likely be making more variations on them again soon. For this you’ll need a mason jar (or similar shaped glass), strawberry ice cream, milk, white and dark melting chocolate and one of our Mickey Chocolate and Strawberry Cupcakes. See recipe card below for full instructions!

Ingredients

  • 1/2 Pint Strawberry Ice Cream
  • 1/4 c.- 1/2 c. milk
  • Melted Dark Chocolate Wafers  (12 oz)
  • Melted White Chocolate Wafers ( 12 oz)
  • Red Food color, 1- 2 drops
  • Mickey Cupcake for topper. Recipe above.
  • Mason Jar for shakes
  • Paper Straw

Instructions

  1. Melt dark chocolate in double boiler or microwave
  2. After melted, spoon melted chocolate into piping bag or parchment paper cone and pipe chocolate along sides of glass
  3. Put Mason Jar in freezer to set chocolate while you melt white chocolate using the same method as the dark chocolate
  4. Once white chocolate is melted, add a small amount of red dye to achieve the desired color of pink that will coat outside of mason jar, creating the “drip” effect
  5. Spoon into piping bag or parchment paper cone and pipe drips along the outer rim of masor jar.
  6. Cover with sprinkles and put masor jar in freezer while making milkshake to help chocolate set
  7. In a small blender, or by hand, blend ice cream and milk together until achieving the desired thickness and consistency
  8. Take mason jar out of freezer and fill with milkshake
  9. Top with Mickey cupcake and enjoy!
Heart Shaped Jammie Dodgers

Mickey Heart Shaped Shortbread

We love tea time. Any excuse to have tea is good enough for us. So what is better to have with a Valentine’s Day tea than a Jammie Dodger? We decided to create this Jammie Dodger-type cookie with a simple shortbread, strawberry jam, and a sprinkle of powdered sugar. Simple and delicious. Raspberry jam would work well also, but feel free to make whatever flavor combinations your heart desires!

For this recipe, you’ll need shortbread (we use this recipe), strawberry jam, and powdered sugar. We used a heart-shaped cookie cutter and a miniature Mickey head cookie cutter(we used the smallest one in this set) to get this design but you can mix it up any way you like. The perfect Disney Valentine’s Day Recipes if you’re doing something fancier, like a tea with your mom or daughter. This recipe is adapted The Spruce Eats.

Instructions

  • 8 ounces unsalted butter, room temperature
  • 1/2 cup caster sugar, or superfine sugar, more as needed
  • 1 pinch kosher salt
  • 2 cups all-purpose flour, more as needed
  • 3 1/2 ounces cornstarch

Instructions

  1. Preheat the oven to 325 F. Lightly grease a baking sheet.
  2. In a large bowl, cream together the butter, sugar, and salt until light, fluffy, and pale in color, either by hand or with an electric mixer.
  3. In a separate medium bowl, whisk together the flour and cornstarch.
  4. Sift the dry ingredients into the bowl with the butter and sugar.
  5. Mix quickly and thoroughly to bring all the ingredients together but do not overmix. If worked too much, the dough will warm up and the shortbread will have a poor crumb.
  6. Pour the mixture onto a cold and lightly floured work surface. Knead lightly and quickly to form a loose dough.
  7. Roll out the dough between 2 sheets of parchment paper to 1/4 inch thick.
  8. Cut into heart shapes
  9. Then use your Mickey head cookie cutter to cut the shape from the center. This makes about 12 heart shaped shortbreads, so 6 will need the mickey head cutout.
  10. Place the shortbreads onto the prepared baking sheet, and bake for 25 minutes, or until pale brown and crisp.
  11. Once Cookies have cooled slightly spread strawberry jam onto bottom cookie.
  12. Top with the cutout piece and sprinkle the warm shortbreads with superfine sugar and let cool completely on a wire rack.

Mickey Nutella Pop Tarts

If you haven’t figured it out yet, we are really loving chocolate and strawberry for Valentine’s Day. And if you’re not a Nutella fan….well then I’m not sure I know you.(Just kidding, well maybe…) These pop tarts are filled with Nutella and Strawberry Jam, and topped with icing for a perfect poptart look. We added fun Valentine’s Day sprinkles to the top and Nutella drizzle(because more Nutella is never a bad thing) to complete the look! As one of the Disney Valentine’s Day Recipes that looks a bit harder than is, just follow the recipe below and you’ll be fine!

  • Nutella, Strawberry or Raspberry Jam
  • Egg Wash (egg + small amount of water)

Instructions

  1. Preheat oven to 350 degrees

  5. Fill Mickey head and each ear with a small spoonful of strawberry jam, followed by a small spoonful of Nutella on half of Mickey Heads
  6. Place other half on top of pop tart base and using a fork, seal edges of poptart. Using water or egg wash, be sure that edges are sealed so filling won’t run out
  7. Brush remaining egg wash on tops of pop tarts to help them crisp in oven

  9. Bake for 25-30 mins. Allow pop tarts to cool

For the Icing

  • 1/2 tsp vanilla extract
