Spring has sprung and Easter is just around the corner. We love planning Easter menus, coloring eggs, and enjoying all of the Easter fun we can soak up. This year we decided to create a Carrot Cake Mickey waffle, perfect for Easter brunch or any time you feel like having a little extra magic to your day!
Carrot Cake Mickey Waffles
These Carrot Cake waffles were actually so simple. They took me a very long time to figure out for some reason; and every time I tried to use a waffle mix as the base, they just didn’t turn out. Earlier in the season, I had made Funfetti waffles using this adorable bunny waffle maker and shared them on our Instagram page. They were such an easy thing to make using only cake mix, so I figured I could try the same for carrot cake, right? So I grabbed a spiced cake mix from Target, added some chopped carrots and a little extra cinnamon and they turned out great! Super easy and fast; and with the cream cheese icing added, they tasted just like carrot cake. Is it a traditional breakfast? Probably not, but I think we can get over it for a special occasion.
Carrot Cake Waffles Ingredients
You’ll just need a few ingredients for these and depending on your tastes, you might not even need the extra cinnamon. We always love an extra kick of flavor and always increase spices on everything, but it’s definitely not necessary if you prefer a more mild flavor.
For the Carrot Cake Mickey Waffles you’ll need:
- Spice Cake Mix, you can use whatever one you like but we used this Betty Crocker one
- 3 eggs
- Cinnamon
- Oil
- Water
- Carrots
Cream Cheese Icing
The cream cheese icing is really what makes these pop and gives these carrot cake waffles that carrot cake flavor we all know. If you don’t like cream cheese though, you could substitute it for syrup and we especially love this cinnamon vanilla-infused maple syrup for the rich cinnamon flavor.
For the Cream Cheese Icing:
- Cream Cheese
- Milk of choice
- Powdered Sugar
- Food Processor
Mickey Waffle Maker
This Mickey Waffle maker is absolutely magic and although it might seem like a little of an investment, we have used ours for so many occasions that it definitely gets its use in our house! If you plan to use this Mickey waffle maker like we did, just a word of caution. Since it is in fact cake batter, the batter expands quite quickly and more than you would think. We used about 1/4 c. of mix to fill each mickey waffle section on the maker and that was plenty. So I recommend filling it slowly, spreading it around, and keeping the temperature set to “light”.
Carrot Cake Mickey Waffles Recipe
Carrot Cake Mickey Waffles

Ingredients
- 1 Box Spice Cake Mix
- 3 Large Eggs
- 1 cup water
- 1/3 cup oil
- 3/4 cup shredded carrots
- 4 oz cream cheese
- 1/4 cup milk
- 1 cup powdered sugar
Directions
- Step 1 In a large bowl, add cake mix, oil, water and eggs and mix until smooth.
- Step 2 Stir in shredded carrots.
- Step 3 Heat Waffle Maker to light or medium-low heat
- Step 4 Fill the waffle maker and cook for about 3 minutes or until golden
- Step 5 In a microwave-safe bowl, heat milk and cream cheese together for about 30 seconds until warm.
- Step 6 Stir together until creamy.
- Step 7 Add powdered sugar and mix well until all clumps are gone.
- Step 8 Top waffles with cream cheese icing
- Step 9 Enjoy!
