How to Make Carrot Cake Mickey Waffles for Easter

Spring has sprung and Easter is just around the corner. It’s the perfect time for try out some new Easter Recipes for the season. Mainly, because, we love planning Easter menus, coloring eggs, and enjoying all of the Easter fun we can soak up. This year we decided to create Mickey Waffles with Carrot Cake to add a little more fun to the season. Perfect for Easter brunch or any time you feel like having a little extra magic to your day!

How to Make Carrot Cake Waffles

These Carrot Cake waffles were actually so simple. They took me a very long time to figure out for some reason; and every time I tried to use a waffle mix as the base, they just didn’t turn out. Earlier in the season, I had made Funfetti waffles using this adorable bunny waffle maker and shared them on our Instagram page. They were such an easy thing to make using only cake mix, so I figured I could try the same for carrot cake, right? So I grabbed a spiced cake mix from Target, added some chopped carrots and a little extra cinnamon and they turned out great! Super easy and fast; and with the cream cheese icing added, they tasted just like carrot cake. Is it a traditional breakfast? Probably not, but I think we can get over it for a special occasion.

You’ll just need a few ingredients for these and depending on your tastes, you might not even need the extra cinnamon. We always love an extra kick of flavor and always increase spices on everything, but it’s definitely not necessary if you prefer a more mild flavor. Add in a Mickey Waffle Maker and you’re all set. Luckily, this Disney inspired breakfast only takes about 30 minutes to pull together, and makes enough for about 4 people. Here are all the details of how to make these on your own! Serves 4 with 12-15 waffles, depending on size.

  • Cook Time: 10 MINS
  • Total Time: 25 MINS

Carrot Cake Mickey Waffle

Ingredients

We’re keeping our carrot cake waffles simple with a boxed cake mix you can just pick up at the store! Other ingredients you should have on hand. And be sure to plan to make the cream cheese icing too! Because it really adds some extra magic, and a little protein too! 

  • 1 Box Spice Cake Mix, We like the Betty Crocker Carrot Cake Mix best.
  • 3 Large Eggs
  • 1 cup water 
  • 1/3 cup oil 
  • 3/4 cup shredded carrots 

Instructions

  1. In a large bowl, add cake mix, oil, water and eggs and mix until smooth.
  2. Stir in shredded carrots. 
  3. Heat Waffle Maker to light or medium-low heat
  4. Fill the waffle maker and cook for about 3 minutes or until golden
  5. In a microwave-safe bowl, heat milk and cream cheese together for about 30 seconds until warm. 
  6. Stir together until creamy. 
  7. Add powdered sugar and mix well until all clumps are gone. 
  8. Top waffles with cream cheese icing; Enjoy!

Cream Cheese Icing Recipe

The cream cheese icing is really what makes these pop and gives these carrot cake waffles that carrot cake flavor we all know. If you don’t like cream cheese though, you could substitute it for syrup and we especially love this cinnamon vanilla-infused maple syrup for the rich cinnamon flavor. 

Ingredients

  • Food Processor
  • 4 oz cream cheese 
  • 1/4 cup milk 
  • 1 cup powdered sugar

Instructions

Add everything to the food processor and mix until creamy. Feel free to add more milk if you want a thinner consistency. Note, that ours was pourable like syrup with the measurements we used here.

The Best Mickey Waffle Maker 

This double flip Mickey Waffle maker makes 6 waffles at a time, and is absolutely magic and although it might seem like a little of an investment, we have used ours for so many occasions that it definitely gets its use in our house! Of course you can also grab a cheaper Mickey waffle maker for single 4″ waffles, but it will take a bit longer. If you plan to use this Mickey waffle maker like we did, just a word of caution. Since it is in fact cake batter, the batter expands quite quickly and more than you would think. We used about 1/4 c. of mix to fill each mickey waffle section on the maker and that was plenty. So I recommend filling it slowly, spreading it around, and keeping the temperature set to “light”.
